Brewer's Comments: "This will be my eigth attempt at brewing beer, my third using a 'Hoppy' recipe that included 1 can of (HME) and can of (UME). After fermenting for 21 days I will sample this brew before bottling it. From the very first taste I will know if waiting another 21 days for carbonation to complete, will be a challenge".

I created a lite version of this beer at bottling time by filling a 1 litre PET bottle a bit more than halfway with beer from the fermenter and then topping it off with filtered water. I let it carbonate for 21 days and it produced a very tasty, lighter version of the original recipe.

Next time I plan on brewing up more of this I'll do the entire 2 gallon batch this way, it should produce 14 one litre bottles of lite ale.
